CHICKEN 'QUICHE'  posted by Eurika Buckle Ingredients:500g chicken breastssalt and peper ( BB Seasalt, seaweed and herbs can work well)juice and rind of 1 lemon250g mushrooms, slicedoil200g spinach, stems removed3 eggs, beaten250g-tub cream cheese Method:1. Preheat the oven 180C. Spray an ovenproof dish.2. Season the chicken with salt, pepper and the lemon juice and rind. Steam in a food steamer until done.3. Remove the bones and cut into small pieces.4. Fry the mushrooms in a little bit of oil till just softened.5. Add the spinach and fry until the spinach welts. Beat the eggs and cream together.6. Bacon and Mushroom Smothered Pork Chops from Julia's Album One-Pan Smothered Pork Chops with creamy mushroom, bacon and fresh thyme sauce.  Use boneless pork loin chops.  Everything is cooked in one large skillet.  Easy recipe.  Minimal cleanup.   Ingredients 6 strips bacon , uncooked 2 lb pork loin chops , boneless (3 or 4 pork chops, depending on size) salt and pepper 8 oz mushrooms , sliced 2 garlic cloves , minced 5 sprigs fresh thyme , just leaves 1 tablespoon olive oil 2/3 cup chicken broth 1/2 cup heavy cream   Instructions Chop bacon into smaller bites.  In a large skillet, cook on medium heat until the bacon is cooked. Creamy peri peri chicken livers Ingredients 450-500 grams chicken livers200 ml fresh cream1 tsp ground black pepper1 tsp chilli powder1 tsp red chilli flakes2 tsp fresh crushed grlic 1 tsp crushed ginger2 tsp coconut oil2 onions1 red chilli (green is fine also)Sprig curry leaves InstructionsHeat up oil, add in onions and fry until soft and translucent, add garlic and ginger then fry for another minute, add spices and curry leaves and let fry until it starts to stick to the bottom of the pan, add your chicken livers (ensure excess water has been drained) and chilli, allow to fry till the lovers are cooked and browned. These are a few of the meals prepared by either one of my family: ages 11 – 45. Often we will repeat ingredients for a few days or alternate between the ingredients over a few days for a variety of dishes. A super add on or condiment is the Zest Moringa Chilli or home-made mayo.
